BASC has joined forces with Lincolnshire Game to run the Game On! Cookery Competition.
This year student chefs from across the UK are challenged to create a canapé using partridge meat, suitable for a large event.
We all know that game meat is not only healthy, thanks to the fact it’s high in protein and low in fat, but also that it’s super tasty.
This competition is a great way to educate the chefs of the future in the hope they can help get more game on menus up and down the country.
This year’s winning starter will be served at the Eat Game Awards, held in London next March. The competition will run from 2 September 2024, with entries closing 3 February 2025. For your initial entry you will need to include the following information on our online form:
The top ten finalists will be invited to a final round cook-off at Westminster Kingsway College, on 6 March 2025.
On the day of the cook-off final, you and your lecturer will be invited to a venison masterclass by senior lecturer Jose Souto. You will then enjoy lunch in the Vincent Rooms restaurant before taking part in the cook-off.
The overall winner will be chosen by a select panel of judges, with the winning dish served at the gala dinner on 20 March 2025. They will also receive a set of Flint & Flame knives.
To be eligible for this competition you must be a catering student either at college, or through an apprenticeship. Any and all levels are welcome.
George Oakes, a third-year student at Westminster Kingsway College, took top honours in the 2023 competition, with a Peruvian street-food inspired venison canapé.
The judges were in full agreement on the winner, which included Jose Souto and singer, farmer and presenter JB Gill, with his show-stopping venison canapé; anticucho with nori and puffed wild rice.
Kia Vincent, a student at Fareham College in Hampshire, won the first ever competition in 2022, and cooked her Caribbean style canapé at the Eat Game Awards.
Her Jamaican style venison patty wowed the judges, with the panel in “100 per cent agreement” that she was the standout victor.
“Everything in the competition has been about learning and developing myself,” said Kia.
